JAM MAKING & PRESERVING 10:00-16:00
COURSE DETAILS AND AIMS:
Join us for a practical, hands-on day of learning how to make jam and preserve fruits and vegetables. During the day we will learn the essential techniques of preserving by making two different recipes to take home with us, a traditional fruit jam and a pickle. Learners will discover: – The essential rules for preserving food safely: preventing spoilage, sterilising equipment, filling and sealing jars correctly, shelf life and storage – Equipment: essential preserving equipment will be discussed and demonstrated, from jars and bottles to preserving pans, jam thermometers, jelly bags and food mills – Preservation techniques: drying, freezing, bottling, pickling, jam and jelly-making will all be discussed and tips given for how to apply each to different fruits and vegetables – Practical jam making and pickling: During the day you will practise the techniques discussed by making both a traditional jam and a pickle, using the fruits and vegetables of your choice (ingredient list and guidance will be provided prior to the course).
SKILLS OR QUALIFICATIONS NEEDED:
None required. Whether you are looking to preserve your homegrown produce, cut down your food waste or add interesting new recipes to your culinary repertoire, come and join us for a fun day of jam making and preserving.
MATERIALS/EQUIPMENT REQUIRED FOR FIRST CLASS:
Learners will need to bring their own ingredients, a complete list will be provided prior to the course, but will include:
For the jam: sugar and your choice of soft fruit, such as raspberries, strawberries, blackberries etc For the pickle: sugar, vinegar, spices, onions and your choice of vegetable, such as courgette, cucumber, sweetcorn, tomato etc It would be helpful if learners are able to bring their own induction-ready saucepan or preserving pan, if they have one, but this is not essential. Further information will be provided prior to the course.

Ross Lilley has been growing and preserving fruit and vegetables for over 15 years, selling his homemade jams, jellies and chutneys at local farmer’s markets since 2018. Ross can usually be found on his vegetable plot with his young family, or teaching Grow Your Own gardening courses at Sawston Village College.
